AMARILLO® VGXP01 c.v. is one of those legendary varieties and is now in the top 10 most widely used hops. It was developed by Virgil Gamache Farms in the Yakima Valley and was originally named VGXP01 cv. Amarillo® offers solid bittering properties in the 9-11% Alpha Acid range and it packs one of the highest myrcene oil contents (60-70% of total oils) of any hop. This gives it a very sweet citrus flavor and aroma that is closer to oranges than grapefruit. The citrus character is backed by some light floral notes as well as melon and peaches. AMARILLO® VGXP01 c.v. tends to have lower yields, but is extremely resistant to downy and powdery mildew. Ballistic IPA by Ale Asylum and Rogue's Yellow Snow IPA are both single-hopped AMARILLO® VGXP01 c.v. beers.

US Amarillo 

GR Polaris is a hop variety developed by the Hop Research Center in Hüll, Germany in 2012. It is known for its high alpha acid content, which contributes bitterness to beer, as well as its pleasant aroma characteristics. GR Polaris hops are a dual-purpose hop, meaning they can be used for both bittering and aroma purposes in brewing.

GR Polaris hops are often described as having intense aromas with hints of mint, pineapple, and herbal notes. They are prized by brewers for their versatility and ability to add complexity to a wide range of beer styles, including pale ales, IPAs (India Pale Ales), stouts, and lagers.

These hops are named after the North Star, Polaris, reflecting their status as a guiding light for brewers seeking to create distinctive and flavorful beers. GR Polaris hops have gained popularity among craft brewers worldwide for their unique aroma profile and consistent brewing performance.

Developed by the New Zealand Institute for Plant and Food Research hop breeding program, Nelson Sauvin™ was named after the Sauvignon Blanc grape. This unique high alpha dual purpose hop produces very distinct white wine and gooseberry characteristics. With tropical fruit notes and low co-humulone it has become a go to variety for IPA's, Saisons and wheat ales. It is generally used in late boil additions or as a dry hop addition and produces a bold multi-dimensional result with distinct flavor.

Developed by Washington State University and released in 2013, Cashmere Hops is the result of a marriage of Cascade and Northern Brewer. Fortuitously, it features alpha acids higher than that of Cascade. A good dual-purpose hop, Cashmere showcases flavors lemon, lime and melon, exhibits a smooth bitterness and is mildly aromatic with a subtle herbal bouquet.
