Rice has been the family business since our great-granddad farmed rice in Louisiana in the 1920s, but it wasn't until 1981 that our dad, Darby Doguet, put a rice dryer and mill together in Beaumont, Texas, and called it Doguet's Rice Milling Company.

Medium grain rice, when compared to long grain, has a shorter, wider kernel that is two to thee times longer than its width.  Cooked grains are more moist and tender than long grain rice, and have a greater tendency to cling together.
