“Wind-malt” is a long-forgotten style of Belgian malt that was allowed to air-dry in the lofts of barns. To our knowledge, it has never been produced commercially in North America. We’ve revived it with “Gateway,” a malt that is bursting with the aroma of fresh-cut hay while being nearly translucent in color. Gateway is perfectly-suited for decoctions, step mashing, and is the missing ingredient when brewing historic styles of beer. (Color: 1.2 SRM, PPG: 38)

Opal 22 packs in heaps of lightly-toasted, graham and chocolate flavor - just think: S’mores around the campfire minus the marshmallow. Use anywhere from 0-100% to add even more depth to your grain bill.

Opal 44 is your next, secret ingredient. Sweet, moderately-toasted, with hints of chocolate and raisin; it’s wort is reminiscent of homemade almond roca. The typical usage rate is 2.5 - 5%, but at 44 DP, it can be used up to 100%.

Mecca Grade is an estate malthouse located on 1,000 irrigated acres in Oregon. Our location is in the rain shadow of the Cascades which provides hot, dry days and cool nights perfect for growing specialty seed and grain.

Much like a vineyards’ location determine the character of its grape varietals, our grains are unique due to their uniform growth within a 2-mile radius of the malthouse. As such, our malts are truly unlike anything else available.

Inspired by tradition and driven by our uncompromising spirit, we’ve innovated an entirely new process for creating Mecca Grade’s line of artisan malts. Combining time-honored methods with modern technology, we produce the most flavorful malts available via a process we call “Mechanical Floor-Malting.” This one-of-a-kind machine of our own invention with shallow grain beds in perpetual motion allow us to soak, stir, and kiln our grains to perfection; delivering malts of unrivaled consistency and bursting with character.
