A roast unveiling a diverse array of flavor compounds, this malt builds upon our Vienna to resemble a typical Amber in color (35L), but brings exponentially more depth.  Deep biscuit flavors reminiscent of toasted Grape Nuts, Bran Flakes, and hard pretzel shell, with an ever-so-slight bitterness in the background.

Conventional (Non-GMO)

Our Munich is the highest kilned of our base malt selections. Enzymatic enough to be the backbone of any malt-forward beer but also robust enough to play backup, making itself known at just 10-15% of grist. 8-9L

Munich

Well modified and kiln finished with a jump in curing temps to release the slightest bit of sweetness (saltines, sunflower seed, honeysuckle) and unlock hints of cereal, pretzel, and pizza crust. Also a great choice for all-malt distillers.

English Pale

At under 2L, this is as flavor neutral as it gets around here.  Virginia-grown 2-row winter barley, slightly undermodified and cured at lower temperatures to unveil its earthier flavor side (straw, dry grass, mineral, crust). Low in color to provide a very light, crisp wort.

Virginia Pils

Best suited for adjunct distillers, this highly modified 2-row barley is malted exclusively to maximize its conversion potential. Our low-and-slow kiln schedule maintains the highest enzyme package with the lowest color specs possible while helping it's earth-tone flavor showcase what Virginia-grown barley has to offer.

Distillers Barley

The must-have for dark beers, this carafa-style black malt pushes the temperature range of our drum roaster to develop a mild burnt (but not acrid) flavor with a coffee and dark chocolate underbelly. Not debittered, but surprisingly low bitterness compared to our Milk Chocolate malt.

Bakers Cocoa

A lighter version of typical chocolate malts at 270L, this chocolate malt brings a little coffee bitterness to the table with heavy roasting notes and a touch of burnt toffee.

Milk Chocolate

With a more homogenous glassy kernal profile than kiln-produced caramel malts, our crystals are "mashed in the husk" in our drum and then roasted to color specs to add the color depth and sweetness you rely on.

Dextrin & Crystal

Impart that addictive spice with our kilned or take it to a whole new dynamic of sweetness with our crystal. A hybrid variety bred for higher yields and better winter hardiness, our farmers will thank you too.

Brasetto Rye

Slightly higher protein than white wheat but with a stiffer, slightly more bitter flavor backbone, this standard kilned wheat malt also ranks a notch or two higher on the color scale thanks to the higher phenol and tannin content.
