Our unique syrups are crafted exclusively from the sap of maple, birch, walnut, beech and other rare tree species to provide the greatest diversity of plant-based syrups in the world. We are a leading supplier of certified organic tree saps and syrups used by food technologists and manufacturers in beverages and packaged goods. Our 800 acres of ramps (wild leeks) are sustainably harvested each year for spice companies and the foodservice sector. 

Co-founded in 2016 by Michael Farrell, Ph.D., the former Director of Maple Research at Cornell University, The Forest Farmers is the output of many years of innovative research and development to determine how to best harness the wonderful and delicious diversity of our native woodlands. We own and manage nearly 10,000 acres of certified organic wild forests in NY and Vermont and operate two state of the art production and packaging facilities. 



New Leaf Tree Syrups

This delicious, unique syrup is made by boiling the cider of fresh New York apples from a local apple orchard into a sweet apple cider syrup. With a great tart, sweetness, this is a delicious sweetener for any product.

Apple Cider Syrup

Conventional (Non-GMO)

Strong notes of dried pear and raisins adds complexity and sophistication to any recipe. We have very limited supplies so be sure to order early to secure your bottle of this unique and rare syrup.

Pure American Beech Syrup

Condensed from the late-spring sap of wild birch trees, this tangy syrup imparts sour fruit notes to any dish. It is too powerful for pancakes but unbeatable at the grill, in savory sauces, glazes, and cocktails.

Tangy Birch Syrup

The liquid that flows through maple, birch, and other tree species every spring is most commonly referred to as sap, though when bottled up and sold as a beverage it will often be described as ‘maple water’ or ‘birch water’.

Indeed, it is primarily water that is naturally fortified with a wide range of minerals, polyphenols, and antioxidants. It also contains a small amount of sugar (<1% in birch and 2-3% in maple) that gives it a subtly sweet flavor.
