Spirits distilled from Oaxacan Green Corn tend to have a richer, more layered flavor compared to those made with more conventional corn varieties. It often carries subtle sweetness with hints of nuttiness, which balances well with smoky or aged spirits. Especially when freshly ground or used as a mash, it can give off floral and grassy aromas that enhance the sensory experience.

When used in brewing, it can add a subtle complexity to ales or lagers, often complementing ingredients like wild yeasts or spices. Some craft brewers use it in farmhouse ales, experimental lagers, or even stouts to bring out those earthy and nutty characteristics.
