Hard Red Spring Wheat (HRSW) grown in California, is a premium wheat variety prized across the food and beverage industries, especially among bakers, maltsters, brewers, and distillers, due to its high protein content, strong gluten, and distinct flavor.

In baking, it is prized for high protein (typically 13–16%) which leads to:

• Strong gluten development
• Excellent dough strength
• High loaf volume
• Results in chewy texture, open crumb, and extended freshness.

HRSW is occasionally used to make specialty malt, especially when a unique flavor profile or higher enzymatic power is desired. It has a limited  role in brewing compared to barley, but can be part of adjunct malt formulations or used in craft brewing for:

• Adding body and head retention
• Contributing to mild, nutty, grainy flavor
• More enzymes than soft wheat, but less than barley
• Brewers typically use pre-gelatinized wheat flakes or wheat malt, but HRSW offers higher protein and flavor for small-batch brews

HRSW can be used in grain bills for whiskey and vodka, especially wheat-based bourbons or neutral grain spirits by adding mouthfeel, softness, and flavor complexity to spirits.

• High starch content (needed for fermentable sugars)
• High protein helps fermentation with robust yeast nutrition
• Provides a creamy, bready character to spirits, unlike corn or rye

While it’s harder to grow, HRSW performance makes it worth the premium in applications demanding strength, chew, or complexity.

It’s extensive root system prevents erosion, cleans water, mitigates nitrate leaching, improves soil health, and sequesters more atmospheric carbon than traditional wheat.

Kernza® grain is harvested from intermediate wheatgrass (Thinopyrum intermedium). It’s closely related to annual wheat and has been historically grown as fodder for livestock. The Land Institute, a non-profit research, education and policy organization based in Salina, Kansas, began breeding Kernza for human consumption in 2003.

Kernza’s commercial launch is the result of an unprecedented coalition of land grant universities, farmers, research partners, processors, and CPG companies from 15 states and 10 countries, including leadership from the University of Minnesota’s Forever Green Initiative.

Today the emerging crop is grown on nearly 4,000 acres across the U.S. & Canada and is being sold to sustainability focused brands and consumers.

Its flour extraction rate is very high, which is about five percentage points more than Joe. KS Western Star has good mixing tolerance, which is similar to Tatanka and SY Monument. It has more water absorption than Joe.
